If it’s not greasy, it’s not Fugassa! Try ordering focaccia in any bakery in Imperia: if they are rooted in tradition, they will serve you a strip of the softest, tastiest, oiled baked product ever! The Ligurian focaccia. Of course, in Imperia, you will not find the Genovese DOC, but if you know how to search well you will certainly find some interesting ideas!

Panetteria Blengini – Via S. Giovanni, 10 Imperia
A historic shop on Piazza San Giovanni in Oneglia, the Blengini bakery has been for generations the meeting point for us kids for the afternoon snack. There are two most popular options: the simple focaccia and the one stuffed with cooked ham and cheese. It was the latter that made my teenage Saturday afternoons unforgettable. If you don’t see it when you get to the counter, don’t forget to ask how long it is until the next one to be baked, take a stroll, and go back to enjoy it hot!

Panificio Ferrari – Via S. Tenente Luigi Eula, 34 Pieve di Teco
In Pieve di Teco, fifteen minutes from Borgomaro, you can find the focaccia that comes closest to the Genoese tradition. Thin, golden but soft, oily. When we stopped with my parents to buy something at the Ferrari bakery it was always a party. And I’ll tell you more: it never arrived home intact!
