Equilibrio, his restaurant in Dolcedo, recently earned its first Michelin Star. The name perfectly reflects the concept behind his dishes: a “constant balance of curiosity, respect, and determination.” The restaurant offers more than just a meal; it is a sensory journey that combines modern techniques with fresh, authentic Ligurian ingredients.
